A great retro starter, pan fried in butter; you eat the whole of this tasty fish.
Whitebait are tiny, silvery members of the Herring group which are often eaten as a starter and smaller than Sprats. Sustainably caught.
Best eaten whole - Dust with flour and deep fry for 3-4 minutes. Serve with a garlic mayonnaise. For devilled whitebait add a small quantity of dried English mustard and cayenne pepper to the flour coating.
