Can cook from frozen (will lose a little water) or defrost prior to cooking. Grill, microwave, shallow fry or oven bake. Defrost the cod, rinse and dry. Sprinkle with lemon juice, season and leave for 15 mins. Mix one clove of chopped garlic with olive oil and coat each loin with the marinade. Place in an ovenproof dish, dot with butter and bake in a preheated oven at 200°C/400°F/Gas Mark 6 for 15-20 mins basting with the marinade until the fish is firm and flaky.
