Oven cook: Pre-heat oven to 240°C/Fan 220°C/Gas Mark 9. Place fillets on a wire rack or trivet over a baking tray and cook in the top of the oven for 25-30 minutes, turning halfway through cooking time.
Deep fry: Pre-heat oil to 180°C. Gently lower fillets into the hot oil and cook for 9-12 minutes. Drain well before serving.
