Ensure fillets are fully defrosted before cooking.
PAN FRY: Heat a heavy frying pan and add oil. Once hot, fry the fish skin side down in the pan for 4-5 minutes until crisp and golden. Turn over and cook for a further 1 minute.
TO GRILL: Grill the fillets skin side up under a hot grill for 4-5 minutes or until the skin is crisp and golden. Turn over and cook for a further 1-2 minutes or until cooked through.
