Preheat the over to 180oC/ Gas Mark 4, roast for 10-15 minutes dependant on thickness or until flesh turns opaque and flakes. Pan fry for 3-4 minutes each side ensuring the centre is cooked through. Poach skin side down for 7-8 minutes. Hake takes on stronger flavours well and is great in curries. Also exceptional with bacon or chorizo.
