Italian Cod Bake

- Place fish in an oiled ovenproof dish and drizzle with herbed oil, salt and pepper to taste.
- Scatter with halved baby tomatoes, sliced and cooked courgettes, sliced mushrooms, shredded basil and thinly sliced mozzarella cheese.
- Sprinkle over a breadcrumb crust made by blitzing (in a food processor) an olive bread roll with a small chunk of parmesan cheese and a dash of olive oil. Scatter over the fish mix.
- Bake in a hot oven 200°C for approx. 20 minutes until fish is cooked and the topping is golden.
