Italian Cod Bake

Ingredients

  • 2 Fresh Cod or Coley portions
  • Olive oil
  • Handful baby tomatoes
  • ½ sliced courgette
  • Handful sliced mushrooms
  • Thinly sliced mozzarella cheese
  • Small chunk parmesan
  • 1 olive bread roll
  • Mixed herbs
  • Handful shredded basil

Method/Instructions

  1. Place fish in an oiled ovenproof dish and drizzle with herbed oil, salt and pepper to taste.
  2. Scatter with halved baby tomatoes, sliced and cooked courgettes, sliced mushrooms, shredded basil and thinly sliced mozzarella cheese.
  3. Sprinkle over a breadcrumb crust made by blitzing (in a food processor) an olive bread roll with a small chunk of parmesan cheese and a dash of olive oil.  Scatter over the fish mix.
  4. Bake in a hot oven 200°C for approx. 20 minutes until fish is cooked and the topping is golden.
