Place the fish into a microwaveable dish, cover and microwave for 2-3 minutes until cooked.
Make up a packet mix of cheese sauce.
Gently mix the fish with the sauce and add a handful of cooked and peeled prawns, a few peas and sweetcorn for colour and some grated cheese to taste.
Spoon the filling into ready-made pancakes, roll up and place in ovenproof dish, sprinkle with cheese and bake @ 200°C/Gas mark 6 for approximately 10-15 minutes until golden brown and heated through.
Tip – Adjust the amount of vegetables as required and mix it up by adding peppers or mushrooms. You could also switch to another type of white fish or try the recipe with Salmon.
