Prawn, Avocado and Pasta Salad

A delicious recipe perfect for the Summer!

Suggested cooking methods


  •       200g Regal Superior Prawns defrosted
  •       170g pasta, cooked
  •       1 large avocado, peeled and sliced


  •       1 clove garlic, crushed
  •       1 tbsp fresh chopped Chives
  •       Salt and Pepper
  •       1 Lemon - juice and grated rind
  •       2 tbsps Olive or Vegetable Oil


  1. Place the prawns, pasta and avocado into a large bowl.
  2. Put all the ingredients for the dressing into a screw top jar or small bowl. Shake or whisk until well blended.
  3. Pour the dressing over the salad and gently mix together.
  4. Garnish with chives and lemon wedges.

Tip – use 5 tbsps Italian style dressing if you prefer to use shop bought rather than making a dressing  

Serving suggestion - Serve with hot granary rolls.
