Mussels with Pesto

A delicious treat for Mussel lovers - Great party snack or starter!

  1. Cook the mussels according to pack directions
  2. Drain and discard any unopened shells. Remove half the shell leaving the mussel meat in the other half.  Arrange on a tray or in a shallow dish suitable for under the grill.
  3. Make a pesto using basil, garlic, pine nuts, parmesan cheese and olive oil - place the ingedients into a small blender and blend to the consistency required.
  4. Spoon the pesto over the mussel meat and sprinkle with fresh breadcrumbs.
  5. Place under hot grill and cook until breadcrumbs are golden. 

Cooks Tip: For speed use a ready made pesto.
