Serving Suggestion:
For a quick and easy dish try using polenta to make a crunchy coating on the fish. Season the fillets with salt and pepper and sprinkle with lemon rind. Press the polenta evenly on to the fillets then refrigerate for 30 minutes before shallow frying for 3-4 minutes on each side. Serve with a salad or vegetable of choice.
