Chunky steaks taken from large whole haddock, these make a attractive dish if you don't mind the skin and bones.
Chunky steaks cut from the mid section of large whole haddock. Will contain a large portion of central bone.

Serving Suggestion:
Wash, wipe and trim the fish steaks and remove the centre bones with a sharp-pointed knife. Mix together ½ a finely chopped onion, 100g grated cheese, 50g butter, 1tsp mustard and salt & pepper till well blended. Grill fish for about 5 minutes, turn and grill for a further 3 minutes. Spread the mixture over the fish and lay slices of tomato on each steak. Grill for 3-5 minutes, until the cheese topping is golden and the tomatoes are cooked.
