- Melt butter in a saucepan and fry chopped onions until soft. Stir in flour and heat gently for 1 min, stirring. Remove from heat and stir in 300ml of milk and 45ml dry white wine. Bring to boil slowly, stirring until sauce thickens. Remove pan from heat and add 50g grated cheese and 200g of Regal Superior Prawns. Place fish in shallow dish, spoon over the sauce, sprinkle with further cheese and bake at 200°C/400°F/Gas Mark 6 for 30 mins.
