Tilapia with Thai Sauce

Ingredients:

  • 4 Regal Tilapia Fillets, fresh or defrosted
  • 2 tbsps Cornflour
  • 2 tbsps Sunflower oil
  • 4 Spring Onions , thinly sliced
  • 2 Garlic Cloves , finely chopped
  • Small piece fresh Ginger , finely chopped
  • 2 tbsps Soy Sauce
  • 1 tbsp Brown Sugar
  • Juice 1 Lime and 1 Lime chopped into wedges
  • 1 Red Chilli , deseeded and sliced
  • Handful  Coriander , chopped

Method:

  1. Coat the fish fillets in the cornflour and then set aside.
  2. Heat the oil in a large non-stick frying pan, fry the fillets for 2-3 minutes on each side until crisp; remove and keep warm.
  3. In the same pan, fry the spring onion, garlic and ginger for 2-3 minutes; add the soy sauce, brown sugar and lime juice and simmer until slightly syrupy.
  4. Spoon the sauce over the fish, scatter with chilli and coriander, then serve with the lime wedges.
