Tilapia with Thai Sauce
Ingredients:
- 4 Regal Tilapia Fillets, fresh or defrosted
- 2 tbsps Cornflour
- 2 tbsps Sunflower oil
- 4 Spring Onions , thinly sliced
- 2 Garlic Cloves , finely chopped
- Small piece fresh Ginger , finely chopped
- 2 tbsps Soy Sauce
- 1 tbsp Brown Sugar
- Juice 1 Lime and 1 Lime chopped into wedges
- 1 Red Chilli , deseeded and sliced
- Handful Coriander , chopped
Method:
- Coat the fish fillets in the cornflour and then set aside.
- Heat the oil in a large non-stick frying pan, fry the fillets for 2-3 minutes on each side until crisp; remove and keep warm.
- In the same pan, fry the spring onion, garlic and ginger for 2-3 minutes; add the soy sauce, brown sugar and lime juice and simmer until slightly syrupy.
- Spoon the sauce over the fish, scatter with chilli and coriander, then serve with the lime wedges.
