Tilapia with Orange Juice

Ingredients:

  • 4 Regal Tilapia Fillets, fresh or defrosted
  • 3 tbsps Orange Juice
  • 2 tsps Orange Zest
  • 2 tbsps White Wine
  • 2 Garlic Cloves, minced
  • Handful Spring Onions, chopped
  • Handful Parsley, chopped
  • 2 tbsps Olive Oil
  • 1 Orange, sliced thin

Method:

  1. Preheat the oven to 180°C.
  2. Cut 4 large squares of cooking foil.
  3. In a bowl, mix the oil, juice, zest, wine, and garlic until blended.  Stir in the spring onions and parsley.
  4. Season the fillets with salt and pepper.
  5. Place 2 fillets in centre of each sheet of foil. Pour the orange mix evenly over the fillets.
  6. Top with orange slices. Fold the foil over fish and press to seal edges tightly. Bake for 10-15 minutes or until fish flakes easily.
