Tilapia with Orange Juice
Ingredients:
- 4 Regal Tilapia Fillets, fresh or defrosted
- 3 tbsps Orange Juice
- 2 tsps Orange Zest
- 2 tbsps White Wine
- 2 Garlic Cloves, minced
- Handful Spring Onions, chopped
- Handful Parsley, chopped
- 2 tbsps Olive Oil
- 1 Orange, sliced thin
Method:
- Preheat the oven to 180°C.
- Cut 4 large squares of cooking foil.
- In a bowl, mix the oil, juice, zest, wine, and garlic until blended. Stir in the spring onions and parsley.
- Season the fillets with salt and pepper.
- Place 2 fillets in centre of each sheet of foil. Pour the orange mix evenly over the fillets.
- Top with orange slices. Fold the foil over fish and press to seal edges tightly. Bake for 10-15 minutes or until fish flakes easily.
