Regal Seafood Pie
Ingredients:
Meal sized portion each of:
- Regal Cod Loin, fresh or defrosted
- Boned Salmon Fillet, fresh or defrosted

Regal Smoked Basa, fresh or defrosted
(Or fish of your choosing)
- 200g Regal Superior Prawns or Raw King Prawns, defrosted
- 1 x 200g Sachet of Hollandaise Sauce (or flavour of your choosing)
- Handful each of broccoli, peas and sweetcorn (or veg of your choosing)
- 4 Large Potatoes
Method:
1) Preheat the oven to 200°C/400°F/Gas Mark 6
2) Cook the potatoes in salted water for 15 minutes, mash with plenty of butter & milk (or cream) and set aside to cool.
3) Place the all the fish portions in a microwave and cook for 6-8 minutes or until cooked through. Flake into a large ovenproof dish along with any juices.
4) Blanch the broccoli in salted water for 4-5 minutes, drain and mix with the fish along with the peas and sweetcorn.
5) Sprinkle over the Prawns.
6) Pour over one sachet of sauce and mix through, add milk to increase the sauce if required.
7) Spread the mashed potato evenly over the mixture. If desired, sliced tomatoes can be placed around the edge of the pie and sprinkled with grated cheddar cheese.
8) Bake the pie for 25-30 minutes or until the topping is lightly browned.
9) Serve with seasonal vegetables and crusty white bread
