Red Fish Fillets with Beer

Ingredients:

  • 2 x Red Fish Fillets, fresh or defrosted
  • 1 tbsp Olive Oil
  • 1 small Onion, finely chopped
  • 1/2 tbsp grated Lemon Rind
  • Juice of 1 Lemon
  • Knob of Butter
  • 1 Red Onion, cut into rings
  • 185ml flat Beer

Method:

  1. Pre-heat the oven to 180C.
  2. Line a baking dish with foil and brush with oil.  Lay the finely chopped onion in the base of the dish along with the lemon rind.  Arrange the fish on top.
  3. Sprinkle the fish with lemon juice, season and dot with the butter.
  4. Place the onion rings over the fish and pour over the beer.
  5. Cover the dish with foil and bake for 25-30 minutes or until the fish is cooked through.
