Red Fish Fillets with Beer
Ingredients:
- 2 x Red Fish Fillets, fresh or defrosted
- 1 tbsp Olive Oil
- 1 small Onion, finely chopped
- 1/2 tbsp grated Lemon Rind
- Juice of 1 Lemon
- Knob of Butter
- 1 Red Onion, cut into rings
- 185ml flat Beer
Method:
- Pre-heat the oven to 180C.
- Line a baking dish with foil and brush with oil. Lay the finely chopped onion in the base of the dish along with the lemon rind. Arrange the fish on top.
- Sprinkle the fish with lemon juice, season and dot with the butter.
- Place the onion rings over the fish and pour over the beer.
- Cover the dish with foil and bake for 25-30 minutes or until the fish is cooked through.
