Low Fat Baked Cod with Tomatoes

Ingredients:

  • 4 x Regal Cod or Haddock Loin, fresh or defrosted
  • 1 Onion, finely chopped
  • 2 Garlic Cloves, finely chopped
  • 1 tsp Tomato Puree
  • 4 tbsp Dry White Wine
  • 2 tbsp Breadcrumbs
  • 2 tsp Olive Oil
  • Handful Fresh Parsley
  • Salt & Black Pepper

Method:

  1. Pre-heat the oven to 190°C/375°F/Gas Mark 5
  2. Fry the onions in the oil until softened, add the tomato puree, garlic and wine.  Season.
  3. Bring to the boil then simmer for 15-20 minutes until thickened then add the parsley.
  4. Lay the loin’s in an ovenproof and spoon over the sauce mix; sprinkle with breadcrumbs.
  5. Bake for 20-30 minutes or until the fish flakes easily with a fork.
  6. Serve immediately with a crisp fresh salad.

Serves 4
