Low Fat Baked Cod with Tomatoes
Ingredients:

4 x Regal Cod or Haddock Loin, fresh or defrosted

1 Onion, finely chopped

2 Garlic Cloves, finely chopped

1 tsp Tomato Puree

4 tbsp Dry White Wine

2 tbsp Breadcrumbs

2 tsp Olive Oil

Handful Fresh Parsley

Salt & Black Pepper
Method:
- Pre-heat the oven to 190°C/375°F/Gas Mark 5
- Fry the onions in the oil until softened, add the tomato puree, garlic and wine. Season.
- Bring to the boil then simmer for 15-20 minutes until thickened then add the parsley.
- Lay the loin’s in an ovenproof and spoon over the sauce mix; sprinkle with breadcrumbs.
- Bake for 20-30 minutes or until the fish flakes easily with a fork.
- Serve immediately with a crisp fresh salad.
