Healthy Greek Roasted Tilapia Fillets
Ingredients:
- 2-4 Regal Tilapia Fillets, fresh or defrosted
- Cooking spray
- 1 clove Garlic, chopped
- 1 tsp extra virgin Olive Oil
- Handful Parsley, chopped
- 6 Tomatoes, chopped
- 50g reduced fat Feta Cheese, crumbled
- Salt and Pepper
Method:
- Preheat oven to 180°C.
- Lightly coat a medium ovenproof dish with cooking spray.
- Mix the garlic, olive oil, parsley, tomatoes and feta in a bowl.
- Spray both sides of tilapia fillets with the cooking spray then season.
- Lay fillets side by side, barely touching, in baking dish. Top evenly with tomato mixture.
- Bake for 13-17 minutes or until the tilapia flakes and is no longer translucent. Serve immediately.
