Healthy Greek Roasted Tilapia Fillets

Ingredients:

  • 2-4 Regal Tilapia Fillets, fresh or defrosted
  • Cooking spray
  • 1 clove Garlic, chopped
  • 1 tsp extra virgin Olive Oil
  • Handful Parsley, chopped
  • 6 Tomatoes, chopped
  • 50g reduced fat Feta Cheese, crumbled
  • Salt and Pepper

Method:

  1. Preheat oven to 180°C.
  2. Lightly coat a medium ovenproof dish with cooking spray.
  3. Mix the garlic, olive oil, parsley, tomatoes and feta in a bowl.
  4. Spray both sides of tilapia fillets with the cooking spray then season.
  5. Lay fillets side by side, barely touching, in baking dish. Top evenly with tomato mixture.
  6. Bake for 13-17 minutes or until the tilapia flakes and is no longer translucent. Serve immediately.
