Healthy Courgette Wrapped Cod
Ingredients:
- 4 x Regal Cod Loin, fresh or defrosted, skinned
- 1 Red Pepper
- 1 Courgette
- Olive Oil
- Lemon Juice
- 2tbsp Water
Method:
- Pre-heat the oven to 200°C.
- Halve the red pepper, remove the core and seeds and bake for 20 minutes.
- Slice the courgette into thick strips using a vegetable peeler and wrap round the cod loins.
- Place on a lightly oiled baking tray and squeeze with lemon juice and bake for 20 minutes.
- Remove the peppers and take off the skin; blend in a food processor with a little lemon juice and water and serve as a sauce over the fish.
