Hake Bakes
Ingredients :
- 4 fillets of Regal Hake or other White Fish, defrosted
- 1 quantity of White Sauce (recipe below or purchase packet mix)
- 100g Cooked Broccoli, chopped
- ½ to 1 chopped and cooked Leek (sauté in a little oil or butter until soft)
- 100g Cheese, grated
- Wholegrain Mustard, to taste
- Salt & Pepper
- Fresh Breadcrumbs or crushed Croutons
Béchamel or White sauce
•1½ oz (40 g) of Butter
•1½ oz (40 g) of Plain Flour
•1 pint (600 ml) of Milk
•Ground Nutmeg
•Salt and (white) Pepper
Method:
- Make white sauce from a packet mix or using the sauce ingredients above: melt butter and mix in flour to form a smooth paste. Gradually add the milk whisking all the time and place back on heat. Bring to the boil stirring continuously. As the sauce begins to boil – turn down heat and simmer for 5-10 minutes until thick – keep stirring to prevent lumps forming.
- Add cooked and chopped broccoli and leeks along with the grated cheese to the sauce and mix well.
- Season to taste with wholegrain mustard, salt and pepper.
- Spread the sauce onto the fillets and sprinkle with breadcrumbs or crushed croutons.
- Drizzle with a little olive oil and bake at 190°C/Gas mark 5 for around 15-20 minutes.
