Cod with Spinach and Cheesy Mash
Ingredients:
- 2 x 140-160g Regal Cod or Haddock Loin, fresh or defrosted
- 1 tbsp Plain Flour
- 1 tbsp Olive Oil
- 50g Unsalted Butter
- 1-2 tbsps Fish Stock or Water
- 1 Pack Spinach, washed
- 1 tbsp Lemon Juice
- Mashed Potato (enough for two persons)
- 50g Parmesan or Cheddar Cheese, grated
- Salt & Pepper
Method:
- Lightly flour and season the fish loin.
- Add 1 tbsp of the butter and the olive oil to a pan, heat until hot than add the fish and cook for 2-3 minutes each side until golden brown.
- Melt 1 tbsp of the butter with the stock or water, add the spinach and stir for 2-3 minutes or until wilted. Remove the spinach and bring the remaining juices to the boil. Whisk in the remaining butter with the lemon juice (to taste) to make a spinach butter sauce.
- Warm the mashed potatoes, add the cheese and mix through.
- To serve, spoon the spinach onto two serving plates, place the mash in the centre and place the fish on top. Pour the spinach sauce around.
