Bengal Fish Curry

Ingredients:
- 1 Regal Cod Loin, fresh or defrosted
- 1 tsp Cornflour
- ¼ tbsp Curry powder
- 1 tbsp Hot mango chutney
- ¼ Fish or chicken stock cube
- 75ml boiling water
- ¼ Green pepper, cut into rings
- Fresh chopped coriander to garnish
Microwave Power 800W
Method:
1) Mix together the cornflour, curry powder, mango chutney and fish stock cube in a heatproof jug.
2) Gradually add the hot water, stirring until smooth.
3) Cook uncovered in the microwave on high for 1 minute.
4) Place the fish in a suitable dish, top with the peppers and pour over the sauce.
5) Cover and return to the microwave and cook on high for a further 3 minutes, stirring sauce halfway through cooking time.
6) Leave to stand for 2 minutes before serving with wild basmati rice and green vegetables.
