Smoked Salmon Scramble
Ingredients:
- 227g Regal Smoked Salmon, cut into strips
- 2 Onions, finely chopped
- 6 Eggs, beaten
- 2 tbsps Butter
- Black epper, to taste
- Fresh Chives, chopped
Method:
1. Heat half the butter in a saucepan and cook the chopped onions until softened.
2. Add the smoked salmon and stir through.
3. Add the beaten eggs and stir continuously for 1-2 minutes, add the remaining butter and stir until thickened.
4. Serve on buttered bagels or wholemeal bread garnished with chives (optional)
