Salar Smoked Salmon Fish Cakes
Recipe by Claire Macdonald, Isle of Skye
Ingredients:
- 1 pack Flaky Hot Smoked Salmon, flaked

4 tbsps Chives, snipped

2 tsps Fresh Parsley, chopped

65g Butter, softened

275g Mashed potatoes

2 tbsps Plain Flour

2 Eggs, beaten
-
125g Breadcrumbs

Oil for frying

Salt & Pepper
Method:
- Mix together the salmon, chives, parsley, 50g butter and the mashed potatoes.

Season to taste and shape the mixture into 12 fat cakes about 1½ inches across.

Dip into flour, then the beaten eggs then coat in breadcrumbs

Chill overnight

Brush the fishcakes with the remaining butter and bake for 20-25 mins in the oven at 220°C or alternatively shallow fry for 3-4 minutes each side until browned
Serves 6
