Salar Smoked Salmon Fish Cakes

Recipe by Claire Macdonald, Isle of Skye

Ingredients:

  • 1 pack Flaky Hot Smoked Salmon, flaked
  • 4 tbsps Chives, snipped
  • 2 tsps Fresh Parsley, chopped
  • 65g Butter, softened
  • 275g Mashed potatoes
  • 2 tbsps Plain Flour
  • 2 Eggs, beaten
  • 125g Breadcrumbs
  • Oil for frying
  • Salt & Pepper

Method:

  1. Mix together the salmon, chives, parsley, 50g butter and the mashed potatoes.
  2. Season to taste and shape the mixture into 12 fat cakes about 1½ inches across
  3. Dip into flour, then the beaten eggs then coat in breadcrumbs
  4. Chill overnight
  5. Brush the fishcakes with the remaining butter and bake for 20-25 mins in the oven at 220°C or alternatively shallow fry for 3-4 minutes each side until browned

 

Serves 6
