Salar Flaky Smoked Salmon Frittata

Ingredients
- 50g Flaky Hot Smoked Salmon, flaked
- ½ Kg potatoes, skins on
- 6 eggs, lightly whisked
- Olive oil
- Handful Parsley, chopped
- Salt & pepper
Method
- Boil the potatoes and when almost cooked through, drain and cut into thick slices
- Fry the slices in the oil until crisp and golden on both sides
- Season the eggs and pour over the potatoes
- Scatter the salmon and parsley over the eggs and cook gently, stirring occasionally until just cooked and very slightly runny
- Serve immediately
