Salar Flaky Smoked Salmon Frittata

Recipe by Jane Twelves, South Uist 

Ingredients

  • 50g Flaky Hot Smoked Salmon, flaked
  • ½ Kg potatoes, skins on
  • 6 eggs, lightly whisked
  • Olive oil
  • Handful Parsley, chopped
  • Salt & pepper

 Method

  1. Boil the potatoes and when almost cooked through, drain and cut into thick slices
  2. Fry the slices in the oil until crisp and golden on both sides
  3. Season the eggs and pour over the potatoes
  4. Scatter the salmon and parsley over the eggs and cook gently, stirring occasionally until just cooked and very slightly runny
  5. Serve immediately
