Kedgeree

Ingredients:Kedgeree

  • 500g Regal Yellow Smoked Haddock or Smoked Basa Fillets, skinned & boned
  • 200g Long Grain Rice, cooked as per packet instructions
  • 1 Medium Onion, sliced
  • 2 tsps Curry Paste or Powder
  • 60ml of Cream (optional)
  • 2 Hard boiled Eggs, chopped lengthways
  • 1 Lemon, sliced
  • 1 tbsps Oil
  • Handful chopped Parsley

 Method:

  1. Fill a frying pan with water and add the fish and lemon slices and poach for 5-10 minutes or until cooked.
  1. Heat the oil in a pan and fry off the onion with the curry powder/paste until softened.
  1. Stir together the cooked rice with the fish, cream (if using) and boiled eggs.  Sprinkle with parsley and serve immediately.
