Kedgeree
Ingredients:
- 500g Regal Yellow Smoked Haddock or Smoked Basa Fillets, skinned & boned
- 200g Long Grain Rice, cooked as per packet instructions
- 1 Medium Onion, sliced
- 2 tsps Curry Paste or Powder
- 60ml of Cream (optional)
- 2 Hard boiled Eggs, chopped lengthways
- 1 Lemon, sliced
- 1 tbsps Oil
- Handful chopped Parsley
Method:
- Fill a frying pan with water and add the fish and lemon slices and poach for 5-10 minutes or until cooked.
- Heat the oil in a pan and fry off the onion with the curry powder/paste until softened.
- Stir together the cooked rice with the fish, cream (if using) and boiled eggs. Sprinkle with parsley and serve immediately.
