Devilish Salmon
Ingredients:
- 227g Regal Smoked Salmon, chopped
- 20g Onion, finely diced
- 120ml Vodka
- 120ml Double cream
- ½ Can chopped and peeled Tomatoes
- 200g Tomato puree
- 30g Butter
- 2 Pinches ground Nutmeg
- 1 Pinch Cayenne pepper
- Salt & Black Pepper, to taste
Method:
1) Heat the butter and fry the onion and smoked salmon until the pan begins to lightly smoke, remove from heat and add the vodka.
2) When the vodka has burned off, return the sauce to heat source and mix in the tomatoes, tomato sauce and heavy cream.
3) Season sauce with salt, pepper, nutmeg, and cayenne pepper.
4) Reduce sauce to desired consistency and serve on a bed of tagliatelle.
