Cheesy Smoked Salmon Stuffed Potatoes
Ingredients:
- 100g Regal Smoked Salmon, finely chopped
- 6 Small Potatoes
- 2 tbsps Skimmed Milk
- 1 tbsp Butter
- Handful White Cheddar Cheese, grated
- Salt & black pepper to taste
Method:
1) Cook the potatoes in the microwave until soft.
4) Halve the potatoes and cut off a small slice from the bottom so the potato will stand upright.
5) Carefully scoop out about a teaspoon of potato from the centre.
6) Combine the potato, milk, butter, cheese; season and place a teaspoon of the mixture into the potato shells.
7) Place on a baking sheet and top with a little smoked salmon - bake for another 10-15 mins until heated through.
Great finger food!
