Rice Noodles with Spinach
You can stir your favourite shellfish in with these noodles or use it as an accompaniment for salmon or tuna.
Ingredients:
- 115g Rice Noodles, cooked per packet instructions
- 1 pack fresh Spinach
- 1 tbsp Groundnut Oil
- 2 cloves Garlic, finely chopped
- 2 tsp Thai Green Curry Paste
- 1 tsp Sugar
- 1 tbsp Light Soy Sauce
Method:
- Heat the groundnut oil in a frying pan over a medium heat, add the garlic and stir-fry for 1 minute. Stir in the curry paste and fry for 30 seconds.
- Add the spinach and stir-fry for 1-2 minutes until wilted.
- Stir in the sugar and soy sauce then add the noodles and toss to mix evenly.
- Serve immediately with the seafood of your choice.
