Hollandaise Sauce
Ingredients:
2 Eggs
30ml Lemon Juice
100g Butter or margarine, melted
Salt & Pepper
Pinch of Cayenne
Method:
- Whisk the eggs and lemon juice in a small saucepan.
- Gradually whisk in the butter and cook over a gentle heat, whisking constantly until thickened. Do not allow to boil.
- Season to taste with cayenne, salt and pepper.
You can vary this recipe and create a “Green” Hollandaise by adding chopped watercress, parsley and tarragon into the finished sauce.
Or for a curried hollandaise whisk in 1 tbsp of mild curry powder with the eggs and lemon juice.
