Ginger Veg Stir-fry
This stir fry of finely sliced vegetables makes the perfect base for salmon fillet portions – serve with noodles for a more substantial meal.
Ingredients:
1 Leek, finely shredded
1 Carrot, peeled and finely cut into strips
115g Mange Tout, topped, tailed and finely shredded
2.5cm piece fresh Root Ginger
1 tbsp Vegetable Oil
2 tbsp’s Wine
2 tbsp’s Light Soy Sauce
1. Place all of the vegetables in a bowl, add the wine and soy sauce and mix through.
2. Heat the oil in a frying pan and stir-fry the vegetable mix for about 5 minutes until just tender with bite – do not overcook.
- Place on serving plates and top with salmon or fish of your choosing.
Serves 4 with noodles or 2 without
