Creamy Leeks

This dish is the perfect accompaniment for smoked haddock

 

Slice leeks and sauté  them in a little olive oil and butter for about 5 minutes until they start to soften.  Add single cream and grated cheese and stir thoroughly, reduce the heat and cook gently for about 10 more minutes until thickened and the cheese is melted.

 

Season and allow to cool slightly before serving.

 

You could vary this dish by adding bacon strips with the cream and cheese if desired.
