‘Sort of’ Stir Fried Veg
This stir fry inspired suggestion is great for preserving the colour of your vegetables whilst bringing out their flavour
- Chop broccoli into short florets, removing the stalks and thinly slicing them.
- Heat 1 tbsp of olive oil in a pan and add chopped garlic (to taste) along with chunks of red pepper and turnip and the sliced broccoli stalk.
- Add a pinch of sugar and season to taste – cook for 2-3 minutes, stirring occasionally.
- Add the broccoli florets along with 6 tbsps of water, cover and cook for 3-4 minutes until the broccoli is tender but still vibrant green.
- Add a handful of finely chopped basil, heat through then serve.
