Warm Potted Shrimp Salad

Ingredients:

  • 2 tubs Potted Shrimps, defrosted
  • 2 heads Little Gem Lettuce, finely sliced
  • Low fat Mayonnaise
  • 1tsp Dijon Mustard
  • Lemon Juice
  • Wholemeal Bread
  • Lemon Wedges

Method:

  1. Make a simple mustard mayonnaise by mixing the mustard in with the mayonnaise and adding a dash of lemon juice.
  2. Stand the pots of potted shrimps in a bowl and pour hot water in to about halfway up the pots. Leave until the butter starts to soften and melt in places (about 15 minutes)
  3. Divide the lettuce leaves between 2 plates or bowls.
  4. Invert each pot onto the lettuce. Serve with a good dollop of the mustard mayonnaise, lemon wedges and wholemeal bread to mop up the butter.
