Warm Potted Shrimp Salad
Ingredients:
- 2 tubs Potted Shrimps, defrosted
- 2 heads Little Gem Lettuce, finely sliced
- Low fat Mayonnaise
- 1tsp Dijon Mustard
- Lemon Juice
- Wholemeal Bread
- Lemon Wedges
Method:
- Make a simple mustard mayonnaise by mixing the mustard in with the mayonnaise and adding a dash of lemon juice.
- Stand the pots of potted shrimps in a bowl and pour hot water in to about halfway up the pots. Leave until the butter starts to soften and melt in places (about 15 minutes)
- Divide the lettuce leaves between 2 plates or bowls.
- Invert each pot onto the lettuce. Serve with a good dollop of the mustard mayonnaise, lemon wedges and wholemeal bread to mop up the butter.
