Turkish Prawn Casserole (Karides Guvec)
Ingredients:
- 800g Regal Raw King Prawns, defrosted & shelled
- 2 tbsps Olive Oil
- 1 Onion, chopped
- 1 Clove Garlic, crushed
- 2 Tomatoes, skinned and chopped
- 1 Green Pepper, seeded and chopped
- 1 Red Chilli, seeded and chopped
- Good handful grated Cheddar Cheese
- Salt and ground Black Pepper
- Pinch of Turmeric
Method:
- Preheat the oven to 220°C/425°F.
- Sprinkle the prawns with a pinch of salt.
- Heat the oil in a saucepan and lightly brown the onion and garlic. Turn off the heat.
- In a large bowl, mix the prawns with the tomatoes, peppers, chilli, turmeric and seasoning. Add the onion mixture.
- Divide the mixture into portions, place in individual ovenproof dishes, and scatter over the Cheddar cheese.
- Bake in the middle of the oven for 15 minutes, until cooked through and bubbling and golden on top.
You may also wish to add other seafood such as cubes of whitefish, squid, peeled scampi and scallops.
