Taste of Thailand - Lime Dressed Prawn Salad
Ingredients:
- 500g Regal Cooked King Prawns, defrosted
- Bag of Mixed Salad Leaves
- 1 Green Mango, peeled and cut into fine sticks
- ½ Red Pepper, deseeded & cut into fine sticks
- 50g Cucumber, cut into fine sticks
- Lime Wedges to serve
Dressing:
- 5 tbsps Sunflower Oil
- Juice of 2 Limes
- 2 tbsps Light Soy Sauce
- ½ tsp Caster Sugar
Method:
- Make the dressing by whisking together 5 tbsps sunflower oil, lime juice, soy and caster sugar until dissolved.
- Arrange the salad leaves, mango and red pepper in 4 serving bowls, sprinkle the prawns on top and drizzle with the dressing.
- Serve with lime wedges (add crusty white bread for a more substantial meal).
