Taste of Malaysia - Aromatic Seafood Broth

Method:
- Place the coconut milk, lemongrass, fish sauce, galangal, mushrooms, lime juice, sugar and mange tout into a wok and simmer gently for 10 minutes.
- Heat the groundnut oil in a separate pan and cook the seafood in batches for 2-3 minutes.
- Divide the seafood between 4 serving bowls and pour the broth over. Garnish with coriander and lime wedges.
