Sweet Prawn Stir Fry
Ingredients:
- 500g Regal Cooked King Prawns, defrosted
- 1 Red Pepper, sliced
- 2 cloves of Garlic, finely chopped
- 1 Small Onion, chopped
- 1 Small can Sweetcorn
- Handful of Beansprouts
- 100g Mushrooms, sliced
- 2 tbsps Runny Honey
- 1 tbsp Tomato Puree
- ½ tsp chopped Ginger (optional)
- Sprinkling Tabasco to taste
- Olive Oil
Method:
- Heat 2 tsps of olive oil in a wok and add the onion and garlic and stir through for 2-3 minutes, add the ginger if desired.
- Add the remaining vegetables (except the sweetcorn) and tomato puree and stir-fry for about 5 minutes.
- Add the prawns, sweetcorn, honey and Tabasco to taste and cook for a further 4-5 minutes or until the prawns are warmed through. This time may be increased or decreased depending on how crunchy you like your vegetables.
- Serve immediately with rice or noodles
