Stir fried Prawns with Lime and Broccoli
A quick and simple mid-week dish…nutritious and tasty!
Ingredients:
- 800g Regal Raw King Prawns, defrosted, peeled and deveined if required
- 1 tsp Ginger, finely chopped (use a ready prepared jar or tube for speed)
- 2 tsp Coriander, finely chopped (use a ready prepared jar or tube for speed)
- 1 Lime, zest and juice
- 200g Broccoli, broken into small florets
- Chilli Flakes to taste
Method:
- Marinate the prawns in the ginger, coriander and lime juice and zest.
- Heat a wok and add a spray of oil; add the marinated prawns and broccoli and stir fry until the prawns are cooked (they will be pink). The broccoli will retain some bite so if preferred it can be lightly steamed in a microwave prior to stir frying.
- Season to taste and add a sprinkle of chilli flake.
- Serve with a salad, rice or noodles.
