Prawn and Mango Stir Fry
Ingredients:
- 8 oz (225 g) Regal Cooked King Prawns, defrosted
- 1 Onion, chopped
- Handful Mangetout, topped and tailed
- 1 Large ripe Mango, sliced
- 1 tbsp Vegetable Oil
- 2 tsps Fresh Ginger, grated
- 1 tbsp Dry Sherry
- 1 tbsp Soy Sauce
- 1 tsp Corn-flour
Method:
1. Heat the oil in a wok or large frying pan and stir-fry the onion and ginger for 2 - 3 minutes until just tender. Add the mangetout and prawns and stir-fry for 1 minute.
3. Add the mango, sherry and soy sauce, fry for 1 minute while mixing the corn-flour with 1 tablespoon of water.
4. Add the corn-flour to the pan, cooking and stirring for another 1-2 minutes, until the sauce thickens.
5. Serve immediately with egg noodles
