Prawn and Mango Stir Fry

Ingredients:

  • 8 oz (225 g) Regal Cooked King Prawns, defrosted
  • 1 Onion, chopped
  • Handful Mangetout, topped and tailed
  • 1 Large ripe Mango, sliced
  • 1 tbsp Vegetable Oil
  • 2 tsps Fresh Ginger, grated
  • 1 tbsp Dry Sherry
  • 1 tbsp Soy Sauce
  • 1 tsp Corn-flour

Method: 

1. Heat the oil in a wok or large frying pan and stir-fry the onion and ginger for 2 - 3 minutes until just tender. Add the mangetout and prawns and stir-fry for 1 minute.

3. Add the mango, sherry and soy sauce, fry for 1 minute while mixing the corn-flour with 1 tablespoon of water.

4. Add the corn-flour to the pan, cooking and stirring for another 1-2 minutes, until the sauce thickens.

5. Serve immediately with egg noodles
