Prawn & Chickpea Balti
Ingredients:
- 300g Regal Easy Peel Raw King Prawns, defrosted and peeled
- 400g can of chopped Tomatoes
- 195g Sweetcorn, drained
- 100g Chickpeas, drained
- 1 Green Pepper, deseeded & diced
- 1 large Onion, chopped
- 3tbsp Balti Curry Paste
- 1tbsp Oil
- 1tbsp fresh Coriander, chopped
- Naan Bread (optional)
Method:
- Heat the oil in a wok or frying pan. Add onion and pepper and stir-fry for 2 minutes.
- Stir in the Balti curry paste and cook for a further 2 minutes.
- Reduce the heat, add the tomatoes and chickpeas, stir-fry for a further 2 minutes.
- Add the prawns and sweetcorn and cook until all the prawns have turned pink.
- Stir in coriander and serve with warm naan bread if required.
