King Prawns with Diablo Sauce
Prawns in a spicy tomato sauce – you could try this recipe using Cobia in place of the prawns.
Ingredients:
- 800g Regal Raw King Prawns, defrosted, peeled and deveined if required
- 1 Onion, chopped
- 1 Red or Green Pepper , chopped
- 3 cloves of Garlic, crushed
- 500ml Passata
- 350g jar of Tomato and Chilli Sauce
- Chilli Flakes to taste
- 2 tsps Worcester Sauce
Method:
- Heat a splash of oil in a large wok or frying pan and fry the onion, pepper and garlic for around 5 minutes until soft and lightly golden.
- Stir in the sauce and Passata and a pinch of chilli flakes – bring to the boil and simmer for 5 minutes until slightly reduced.
- Add the prawns and continue to cook gently until the prawns are cooked through – they will turn pink as they cook (avoid overcooking as the prawns will become tough).
- Stir in the Worcester sauce to taste and serve with rice or noodles.
