King Prawns with Diablo Sauce

Prawns in a spicy tomato sauce – you could try this recipe using Cobia in place of the prawns.

Ingredients:

  • 800g Regal Raw King Prawns, defrosted, peeled and deveined if required
  • 1 Onion, chopped
  • 1 Red or Green Pepper , chopped
  • 3 cloves of Garlic, crushed
  • 500ml Passata
  • 350g jar of Tomato and Chilli Sauce
  • Chilli Flakes to taste
  • 2 tsps Worcester Sauce

Method:

  1. Heat a splash of oil in a large wok or frying pan and fry the onion, pepper and garlic for around 5 minutes until soft and lightly golden.
  2. Stir in the sauce and Passata and a pinch of chilli flakes – bring to the boil and simmer for 5 minutes until slightly reduced.
  3. Add the prawns and continue to cook gently until the prawns are cooked through – they will turn pink as they cook (avoid overcooking as the prawns will become tough).
  4. Stir in the Worcester sauce to taste and serve with rice or noodles.
