Fried Squid (Kalamarakia Tiganita)
- 454g of Regal California Squid, cleaned & prepared or Regal Squid Tubes, cut into rings
- Flour for coating
- Olive Oil
- Lemon wedges
- Sea salt & Pepper
- 1 teaspoon of fresh flat-leaf parsley, chopped
Method:
- Preheat a deep frying pan over a low heat (alternatively, preheat a deep fat fryer).
- Pour ½ to ¾ inch of oil into the frying pan (it should not come up to over half the depth of the pan) and turn up the heat to high.
- Add flour to a small bag (such as a sandwich bag), add the squid, gently shake to coat then let sit for a few minutes. Gently shake off excess flour and, when the oil is hot, fry a small batch until crisp and golden brown on all sides, then allow the oil to reheat and cook the remaining batches in the same way. Remove with a slotted spoon and drain on paper towels.
- Season the squid with salt and pepper if desired.
- Garnish with parsley and serve with salad and lemon wedges.
