Fried Squid (Kalamarakia Tiganita)

  • 454g of Regal California Squid, cleaned & prepared or Regal Squid Tubes, cut into rings
  • Flour for coating
  • Olive Oil
  • Lemon wedges
  • Sea salt & Pepper
  • 1 teaspoon of fresh flat-leaf parsley, chopped

Method:

  1. Preheat a deep frying pan over a low heat (alternatively, preheat a deep fat fryer).
  2. Pour ½ to ¾ inch of oil into the frying pan (it should not come up to over half the depth of the pan) and turn up the heat to high.
  3. Add flour to a small bag (such as a sandwich bag), add the squid, gently shake to coat then let sit for a few minutes. Gently shake off excess flour and, when the oil is hot, fry a small batch until crisp and golden brown on all sides, then allow the oil to reheat and cook the remaining batches in the same way. Remove with a slotted spoon and drain on paper towels.
  4. Season the squid with salt and pepper if desired.
  5. Garnish with parsley and serve with salad and lemon wedges.
