Crab Fritters
Ingredients
- 150g Regal Brown Crab Meat, fresh or defrosted
- 75g Regal White Crab Meat, fresh or defrosted
- 225g Mashed Potato
- Parsley, chopped
- 1 Egg, beaten
- Breadcrumbs
- Salt & pepper
Method
1) Mix the crab meat and place into a bowl with the potato, parsley and seasonings.
2) Mix together with a little of the beaten egg.
3) Place onto a floured board and separate into golf ball sized pieces.
4) Form a flat cake and dip into the egg and breadcrumbs.
5) Fry in olive oil for 3-4 minutes until crisp and brown.
