Crab Caesar Salad
Ingredients:
- 1 Regal Boiled Crab, fresh defrosted
- 3 x 15ml (3 tbsps) Olive Oil
- 1 or 2 cloves Garlic, peeled and finely chopped
- 2 slices Foccacia or Plian White Bread, crusts removed and cubed
- 4-6 heads baby Cos or Romaine Hearts Lettuce
- Salt and Black Pepper
- juice of 1 Lemon (optional)
- 3 x 15ml spoon (3 tbsps) prepared Caesar Dressing
- 15g (½ oz) freshly grated Parmesan Cheese
Method:
1) To prepare the croutons: heat the oil with the garlic and cook the croutons until golden brown. Remove and leave to cool on some kitchen towel for about 10 minutes.
2) In a large bowl tear the lettuce leaves into bite size pieces.
3) Remove the brown and whitemeat from boiled crab, discarding the dead man's fingers, add to the lettuce.
4) Add the bread croutons, seasoning, lemon juice, (if using), dressing and cheese.
5) Garnish with freshly chopped parsley and serve.
