Sumptious Salmon Pasta
Cook penne pasta as per instructions, drain and set to one side. Cut skinned and boned salmon fillet into bite sized cubes and dust with lemon pepper. Chop mushrooms, onion and a green pepper and add to a non stick pan with a splash of olive oil and the salmon and stir fry until the pepper on the salmon turns really dark. Add the cooked pasta and warm through, serve with a squeeze of fresh lemon juice on a bed of green salad leaves.
