Seared Salmon with Warm Ginger and Lime Dressing
Ingredients:
- 600g Regal Salmon Fillet portioned into 4 equal pieces
- 1tbsp Oil
- Seasoning to taste
Ginger and Lime Dressing:
- 1 piece of preserved Ginger in Syrup, finely chopped (or substitute fresh Ginger if preferred)
- Rind and juice of 2 Limes
- 2 tbsps runny Honey
- 1 tbsp Water
Method
1) Remove the skin and any pin bones from the salmon if required.
2) Heat the oil in a griddle or frying pan, add the salmon portions and gently fry for 2-3 minutes on each side until cooked through. Season to taste and keep warm while you make the dressing.
3) Place the dressing ingredients into a small pan and heat gently until the honey is melted. Serve the salmon with the dressing.
Lovely accompanied with new potatoes and salad or seasonal vegetables.
A quick tasty main course with a zing!!
