Salmon Stir Fry

Ingredients:

  • 2 x 120-140g Regal Salmon Fillet Portions, skinned and boned, fresh or defrosted
  • 1 tbsp Runny Honey
  • 2 tbsp Soy Sauce
  • 1 tbsp Olive Oil
  • Juice of 1 Orange
  • Handful of Broccoli
  • Handful Green Beans, top and tailed
  • 2 Avocados, peeled, stone removed & sliced
  • 6 Cherry Plum Tomatoes, halved
  • 150g Spinach
  • 50g Walnut Halves

Method:   

  1. Mix together the orange juice, honey and soy sauce.
  2. Cut the salmon into bite sized cubes.
  3. Heat the oil in a large wok. Add the broccoli and stir fry for 2 minutes, add the salmon and beans and stir-fry for a further 2 minutes taking care not to break up the salmon pieces.
  4. Add the remaining ingredients and continue to cook, keeping all the ingredients moving, for a further 2 minutes until the vegetables are cooked but retain some crunch.
  5. Add the orange dressing and heat for 1 further minute. Serve immediately with freshly cooked noodles.
