Salmon Stir Fry
Ingredients:
- 2 x 120-140g Regal Salmon Fillet Portions, skinned and boned, fresh or defrosted
- 1 tbsp Runny Honey
- 2 tbsp Soy Sauce
- 1 tbsp Olive Oil
- Juice of 1 Orange
- Handful of Broccoli
- Handful Green Beans, top and tailed
- 2 Avocados, peeled, stone removed & sliced
- 6 Cherry Plum Tomatoes, halved
- 150g Spinach
- 50g Walnut Halves
Method:
- Mix together the orange juice, honey and soy sauce.
- Cut the salmon into bite sized cubes.
- Heat the oil in a large wok. Add the broccoli and stir fry for 2 minutes, add the salmon and beans and stir-fry for a further 2 minutes taking care not to break up the salmon pieces.
- Add the remaining ingredients and continue to cook, keeping all the ingredients moving, for a further 2 minutes until the vegetables are cooked but retain some crunch.
- Add the orange dressing and heat for 1 further minute. Serve immediately with freshly cooked noodles.
