Salmon Gratin
Ingredients:
- 2 x Regal Organic Salmon Fillet Portions, cooked and flaked
- 4 Eggs, hard boiled & sliced
- 1 Large Onion, finely chopped
- 4 tbsps Butter
- ½ tbsp Curry Powder
- 5 tbsps Flour
- 300ml Milk, warmed through
- 6 tbsps Dry White Wine
- 200g Cheese of your choice, grated
- Salt & Pepper, to taste
Method
1) Fry onions in the butter until soft; stir in curry powder and flour. Add more butter if needed to absorb all the flour.
2) Warm through, stirring constantly for 2-3 minutes.
3) Allow to cool then blend in the milk; return to heat and simmer, stirring constantly for 2 minutes.
4) Add the wine and simmer several minutes more, stirring frequently. Season carefully to taste.
5) Mix the salmon into the sauce and spread half the salmon mixture in the bottom of a buttered baking dish and sprinkle half of the cheese on top. Arrange the eggs over the cheese and spread the rest of the salmon mixture over then cover with remaining cheese.
6) Bake at 200°C for 20-25 minutes or until the dish is bubbling and cheese has browned lightly
